CSF Turkey Kale Soup

INGREDIENTS:

  • 1 lb ground turkey 93/7% fat
  • 100g chopped white onion
  • 255g chopped kale *baby kale can be substituted
  • 1 14.5 oz can Diced Tomatoes-no salt added
  • 1 15oz can Great Northern beans
  • 7g Ground Garlic
  • Salt & Pepper to taste (I start off with 3 grams of salt and 1 gram of pepper)
  • 5g Onion Powder
  • 1 tsp Ground Sage
  • 1/2 tsp Dry Italian Seasoning
  • 1/2 tsp Ground Red Pepper (Cayenne)-optional
  • 1g Crushed Red Pepper Flakes
  • 946ml  (32 fluid oz) Chicken Broth **I used Pacific Organic Free Range Low Sodium

 

INSTRUCTIONS:

  • In a large pot, set heat to Medium High and cook ground turkey along with chopped onion. Add all dry seasonings
  • Add chopped kale and once wilted, turn heat to Low and add chicken stock, diced tomatoes (do not drain) and the Northern beans (drain but do not rinse)
  • Let soup simmer for 15 minutes or longer for all the flavors to meld. Enjoy!
